October 21012 Recipe of the Month – Sage Baked Corn

Sage Baked Corn

Ingredients

  • 2 ½ cup corn
  • 2 TBLS flour
  • 1 TBLS sugar
  • ½ tsp baking powder
  • 1 tsp salt
  • 1 TBLS sage
  • 1 ½ cup milk
  • 2 beaten eggs
  • 2 TBLS butter
  • Pepper to taste

Instructions

  1. Combine flour, sugar baking powder, salt and sage.
  2. Add eggs and milk to dry mixture
  3. Add corn to 8” dutch oven
  4. Pour mixture over corn and stir
  5. Place chunks of butter on top of corn.
  6. Pepper to taste
  7. Use 6 coals on bottom and 10 coals on top.
  8. Cook for 1 hour rotating lid & pot every 15 minutes
